Purple Sprouting Broccoli with Roasted Feta
Most people post articles at the beginning of a vegetables season.
Not me. I’m somewhat of a vegetable publishing maverick, and as such here is a little something to mourn the loss of Purple Sprouting Broccoli.
By the time you are reading this the country should be pretty much empty of the stuff. That’s right, this article is fucking useless. It’s going to be 2014 before you can cook this puppy.
Foil wrap some feta cheese, season it (no salt) and rub with olive oil. Don’t over complicate the herbs here, I used some lovely fresh oregano but use what you have to hand.
Whilst this is in the oven toast some sourdough on a griddle pan. I find brushing a thin layer or olive oil on the bread helps.
Once you have flipped the bread you can now steam the broccoli (You had the steamer ready didn’t you?). This should only take a couple of minutes depending on the age of your Purple Sprouting.
Then you just spread the feta, place your broccoli on top and drizzle with a little olive oil.
Be sure to fiddle with it whilst eating, the broccoli ends up leaving some stunning purple stains on top of the cheese!
